Purees provide chefs with a reliable quality product all year round, without compromising on flavor, color or food cost.  We select premium fruits and vacuum freeze them shortly after picking. They then are packed under vaccum to avoid oxidation and then turned into puree through a grinding process at low temperature. Finally the puree is flash pasteurized: this eliminates micro-organisms, without spoiling any of the fruit’s taste or color.
